The Mockrishes farm old, own rooted, dry farmed blocks high in the North Yuba AVA, and Perigee is built with deliberate restraint: destemmed by hand, crushed by foot, co fermented in small bins with twice daily punchdowns, pressed after roughly three weeks on the skins, then aged in neutral oak
