The Caslot family has been at Domaine de la Chevalerie in Restigne since 1640, farming organically and biodynamically, with a cellar carved straight into the tuffeau bedrock beneath their feet. Les Galichets comes off gravelly alluvial clays, the parcel that gives Bourgueil its ripest, roundest side. Seven years in bottle have knit the dark fruit and spice into something savory and settled,
